Roberto Javier Palacios Magaña has a Masters degree in Gastronomic Communication and Journalism from the Foodie Studies Institute in Madrid and a degree in Culinary Arts from the Universidad de las Américas Puebla. He has a Certificate in Restaurant Management (CRM) from the American Hotel & Lodging Association, as well as a Certificate in Event Meeting Catering (CMEC) from The International School of Hospitality in Las Vegas, NV.
He specialized in creating restaurant desserts at the Basque Culinary Center in Donosti, Spain, at The Notter School of Pastry Arts in Orlando, Florida and Alain Ducasse Formation in Paris. He is a specialist consultant in menu engineering and development of culinary identities.

He has 15 years of experience as an entrepreneur in the food and beverage industry. He carries out research work on street food in Puebla, presenting various talks in Spain and Mexico.

As a teacher, he enjoys exchanging knowledge with students, motivating and accompanying their development in the kitchen, he is passionate about gastronomic culture, the experience of street food in Mexico and the discovery of new ingredients.

Since 2012 he has been a professor and is currently the academic coordinator of the Culinary Arts Program of the Academic Department of Tourism at the Universidad de las Américas Puebla.
